Blackberry Pie with Ice Cream

Mom loved pies best and she loved to bake them. She could make the crust just as good as the insides. She would always keep pie crusts in the freezer ready for anytime she felt like baking. I think of her everytime I have a piece of pie.

Ingredients for the crust:
1 pkg. of Pillsbury Refrigerated pie crusts (2 are usually in the pack)


Filling:
5 cups fresh blackberries
1/3 cup sugar (any kind)
1/4 cup flour

Preheat oven to 400°F.

Place the berries in a large bowl. Fold in flour and sugar. Set aside. Take 1 pie crust out of the packaging and fill with the blackberry mixture, spread filling in pie pan evenly, smoothing out. Then top with the other pie crust and make small incisions on the top with a fork. Bake for 30-40 minutes or until bubbling is visible. Let cool for 25-30 minutes before serving.

  1. Nothing I love more than blackberry pie...well I suppose maybe donuts and nanaimo bars? haha....no really, my favorite pie is blackberry and this recipe is excellent! I love picking blackberries in the summer, so will make this recipe for sure!

    Never had the Pillsbury crust before, must try that...so much easier!

    I know girl...I love berries, all berries too! But donuts and chocolate bars are a strong 2nd place! Yeah I hope you make some pie when I come up there to visit you!!!! :D
